Healthy Recipe: Pumpkin Curry

Pumpkin Curry
(Serves 4)

1/4 piece of slightly pre-steamed pumpkin
1 tablespoon oil
1 teaspoon cumin seeds
2 cloves garlic
1 teaspoon fresh ginger
2 onions
20mls of water
1 + 1/2 tomatoes
5 fresh curry leaves

Masala Mix
1 teaspoon garam masala
1 1/2 teaspoons cumin powder
1 1/2 teaspoons coriander powder
1/2 teaspoon hing (optional)
1/4 teaspoon turmeric powder
1/4 teaspoon chilli powder
teaspoon sea salt

Joyful preparation:

In a small bowl combine masala mix and set aside.
In a heated frying pan, add oil and sauté cumin seeds until brown. add onions, garlic, and ginger.
When the onion has begun to soften ad 20mls water and the masala mix and cook for 30 seconds. Add 1/2 cup water and the tomatoes.

Cook until the tomatoes have broken down then add the pre-steamed pumpkin and mix through, adding more water and salt if necessary.
