Healthy Recipe: Honey Nougat Bites

Honey Nougat Bites
(Yields a dozen)

“As a teenager I loved to eat summer rolls and honey logs, both nougat with almonds, coated in coconut and slightly different in flavours. Here is my raw version.” Rowena

Ingredients from nature:

Nougat
1/4 cup macadamia nuts
1/4 cup cashews
1/4 cup honey
1 teaspoon almond extract
1 tablespoon vanilla extract
1/4 cup coconut oil, melted.
1/4 cup + 1 tablespoon coconut flour
Pinch sea salt

Chocolate Coating
1/2 cup cacao powder
1/4 cup coconut oil
1 tablespoon maple syrup
Pinch sea salt

Almond and Coconut Coating
1/2 cup almonds, chopped finely almost to a meal.
1/4 cup finely chopped coconut flakes.

Joyful preparation:

Blend all ingredients except coconut flour until smooth.
In a large bowl, combine coconut flour and the blended mixture, mixing well until integrated.

Place the mixture in the refrigerator overnight to harden. Roll into bite sized logs and coat with chocolate coating. Roll in almond and coconut coating.

Store in an airtight container in the fridge.
